Okay, I just watched the documentary "Food Inc." and am now instating Meatless Monday. I think we could all stand to eat a little less meat don't you? However, being a meatless newbie, I am in need of a few good recipes. What is your favorite vegetarian or vegan recipe?
So I decided to make Chili Verde for dinner tonight. It's cold outside and I thought it would taste delish! Now don't get me wrong I love my recipe, but it's so much stinking work. And with a very active 14 month old I fear impossible. But folks I am a genius. I simply did all the work the night before. I know what you are thinking, "Melissa, that is not genius...in fact I do that all the time...you need to come down off that high horse" That isn't the genius part. I purchased a crock pot liner, put all of my ingredients in the crock pot, then removed the liner and stored it in the fridge for the next morning! Okay so maybe it wasn't genius, but I was pretty stoked this morning to have zero prep and zero cleanup. I love crock pot liners :)
